If you flown JetBlue before, then you know just how yummy the blue chips are that they offer on flights. Frustrated for paying over $4 for a bag of that same brand of chips that’s filled with air, I decided to create my own darn blue chips. Oh and for some reason, the blue chips in the bag are extremely hard to find in my area. Arggh!

Well this recipe will satisfy your hunger for those chips. It’s super easy to make. In the pictures you see, I used 14 purple passion potatoes. 8 potatoes = 100 calories and 1 potatoes yields about 9 chips. Keep these things in mind when deciding to how many to eat. One small bag of potatoes chips has about 43 chips just to give comparison. I added parmesan cheese for additional calories since I’m trying to put on more weight. You can make these chips without cheese on them. This snack is pretty healthy without sacrificing your arteries.

Ingredients

14 Purple Passion Potatoes
2 tablespoons Coconut Oil
2 teaspoons Salt
Parmesan Cheese -optional

Mixing Bowl
Baking Sheet

Directions

Pre-heat oven at 325 degrees. Wash and Dry the purple passion potatoes. Cut the potatoes into thin slices vertically. Add sliced potatoes into a bowl and then add salt to the mix. Then add the coconut oil that’s already melted into the bowl and mix.

Once your potatoes are coated with oil and salt, place them on a baking sheet. Make sure the potatoes are not on top of each other and are in a single layer. If all potatoes can not fit on the baking sheet, save the rest for the next batch after the first batch is cooked. You can also double up in the oven if you have two baking sheets on hand.

Bake the first side for 10 minutes, and then turn the chips over. Once the chips are turned over, top the chips with parmesan cheese.

Bake for another 7 minutes when the cheese turned slightly golden. Allow to cool for 5 minutes and enjoy!
